Cape Northwester Cocktail (Dark & Stormy)

Our variation on the classic Dark ’n Stormy cocktail traditionally made with dark rum and ginger beer. A strong heady rum cocktail. The secret is a really good spicy ginger beer that complements caramel notes and smoky finish of the Amber Rum.

Ingredients

  • 75ml Deep South Amber Rum
  • 200 ml spicy fiery fizzy ginger beer 
  • Fresh Lime cut lengthways into 4 wedges
  • 5 ml sugar syrup (or vanilla syrup)
  • Angostura  bitters
  • Ice

To make

  1. Add a handful of ice to a tall glass
  2. Squeeze 3 of the lime wedges into the glass and discard peels
  3. Add rum, syrup and ginger beer and stir gently
  4. Add two splashes bitters on top and garnish with last lime wedge
