A refreshing, light rum cocktail with aromatic Deep South Premium White Rum, fragrant lime, fresh mint and sparkling soda water

The heady aromas of the aromatic white rum, fragrant lime zest and sour lime juice sweetened by the sugar are lifted by fresh mint and bubbly soda truly make the Rum Mojito the Prince of Rum cocktails.  Enjoy with lots of ice!    Make a jugful and serve with chilled glasses on a tray for friends to enjoy. 


  • 50ml Deep South White Rum
  • 10 fresh mint leaves
  • 40ml of simple syrup (made with demerara sugar is good)
  • 1 fresh lime, cut in quarters or slices
  • 200ml club soda
  • 1 cup ice cubes


  1. Crush mint leaves and 1 lime quarter in sturdy glass
  2. Add sugar syrup & remaining lime and crush well
  3. Fill glass with ice
  4. Pour rum over ice
  5. Add Soda to taste and stir
