A cocktail whose origins are both fascinating and contested, nevertheless perfectly suited to our refreshing Three Citrus Gin

Originally known as a John Collins, this early fizzy citrus flavoured cocktail was similar to the gin punches being enjoyed in England in the 1800s.  It reputedly became a ’Tom’ Collins either because it was made with Old Tom Gin, or during the Tom Collins Hoax of 1874 in New York. 

Either way, Deep South Three Citrus Gin is the perfect base for this light refreshing timeless classic cocktail

Ingredients

  • 50ml Deep South Citrus Gin
  • 16ml freshly squeezed lemon juice
  • 12ml simple syrup (to taste)
  • 50ml club soda
  • lemon wedge
  • Maraschino cherry
  • Ice

 

To make

  1. Combine gin, lemon juice and simple syrup with a handful of ice and shake until chilled
  2. Strain into a chilled Collins glass, almost filled with ice cubes
  3. Top up with club soda to taste
  4. Garnish with slice of lemon and a cherry
